Spicy Little Muffin Tin Chicken Tostadas
These spicy little tostadas are a fantastic party appetizer that are quick to prepare and incredibly flavorful. The tostada cups stay wonderfully crisp and can be made ahead of time, as can the chicken filling. The heat from the jalapeños is balanced by the creamy mayonnaise, giving you a zesty, spicy kick that won't blow your head off. This recipe makes 10 mini tostadas, perfect for entertaining.

Instructions
- 1
Preheat your oven to 350°F (180°C).
- 2
Use a 7.5cm / 3" round cutter or a clean, empty 400g / 14oz can to cut out 10 rounds from the tortillas. You should be able to get about 5 rounds from each tortilla.
- 3
Gently press each tortilla round into the hollow of a standard-size muffin tin to create a cup shape. Lightly spray each cup with oil. Bake for 10 to 15 minutes, until they are golden brown and crisp. Let them cool completely in the muffin tin before transferring them to an airtight container for storage until you are ready to serve.
- 4
In a bowl, mix together all the filling ingredients except for the chicken until well combined. Then, add the shredded chicken and gently toss to coat it completely with the mixture.
- 5
To serve, divide the chicken filling evenly among the prepared tostada cups. Garnish with fresh coriander/cilantro leaves and diced avocado.

Recipe Notes
I recommend using canned jalapeños for this recipe because their vinegary flavor cuts through the richness of the mayonnaise beautifully. You can use fresh jalapeños if you prefer, but I suggest adding an extra 1/2 to 1 tbsp of lime juice to help balance out the flavor. The spiciness of this dish is a lively, zesty kick rather than an overwhelming heat, as the mayonnaise tempers it considerably.
