    Gently press each tortilla round into the hollow of a standard-size muffin tin to create a cup shape. Lightly spray each cup with oil. Bake for 10 to 15 minutes, until they are golden brown and crisp. Let them cool completely in the muffin tin before transferring them to an airtight container for storage until you are ready to serve.

    In a bowl, mix together all the filling ingredients except for the chicken until well combined. Then, add the shredded chicken and gently toss to coat it completely with the mixture.
