Bring the chicken out of the fridge about 30 minutes before cooking so it’s not icy cold.

Preheat oven to 220°C / 450°F (200°C / 430°F fan). Set the rack in the middle.

Mix melted butter with garlic, sage, rosemary, parsley, salt, and pepper. Stir in the juice from 2 lemon wedges.

Place chicken in a roasting pan. Gently slide a spoon under the skin of the breast and drumsticks to loosen it.

Spoon most of the herb butter under the loosened skin, saving a little for the outside. Rub remaining butter all over the skin and squeeze the other 2 lemon wedges over the chicken.

Stuff the used lemon wedges and rosemary sprigs inside the cavity. Tie the drumsticks together with kitchen string and tuck wing tips under.

Season generously with salt and pepper. Scatter onion and halved garlic bulb in the pan, then set chicken on top. Pour wine around it and drizzle chicken lightly with olive oil.
