This is the fastest and most delicious way to prepare cheesy garlic bread. The secret lies in a simple process: first, drizzle the bread with melted garlic butter and bake it to a perfect crisp, then top it generously with cheese and return it to the oven to melt into a gooey, bubbly masterpiece. The shape is ideal for dipping into your favorite soups and stews, making it the perfect upgrade for any meal. Each batch yields 8 pieces.

Instructions

  1. 1

Preheat your oven to 160°C (320°F).

  2. 2

In a small bowl, mix together the softened butter with the minced garlic and salt.

  3. 3

Using a serrated knife, carefully slice the bread loaf in half horizontally.

  4. 4

Drizzle the garlic butter mixture all over the cut surfaces of the bread, making sure to spread it evenly and not to miss any spots.

  5. 5

Place the buttered bread halves on a baking sheet and bake for 20 minutes, or until the edges are crispy and golden.

  6. 6

Increase the oven temperature to 200°C (390°F). Sprinkle the grated cheese evenly over the top of the bread. Return to the oven and bake for another 7 to 10 minutes, or until the cheese is completely melted and bubbly.

  7. 7

If desired, sprinkle with fresh parsley. Cut the bread into individual pieces and serve immediately as a side dish for your favorite meals, or for dunking into soups and stews!

Recipe Notes

  • Bread – This recipe works best with softer bread loaves like Ciabatta, Vienna, or a standard white loaf, rather than a dense sourdough. Flatter loaves are also better than taller ones to get an optimal bread-to-butter ratio. While it works with sourdough, the softer breads are my personal preference for this recipe.

  • Cheese – You can use mozzarella or any other cheese that melts well, such as provolone or Monterey Jack.

  • Variations – This is more of a versatile method than a rigid recipe, so feel free to get creative! You can spread the bread with pesto, olive tapenade, or other favorite spreads. You can also add dried herbs, truffle oil or butter, or a sprinkle of Parmesan cheese for extra flavor.

  • Storage / Make-ahead – This garlic bread is best enjoyed fresh. To reheat leftovers, simply wrap them in foil and warm them in the oven. For making ahead, assemble the bread by drizzling it with the butter mixture, then wrap it tightly and store it in the fridge until you are ready to bake.
