Slice chorizo into 8mm / 1/3″ thick rounds, cutting on a slight diagonal.

In a bowl, combine pineapple juice, ketchup, hot sauce, brown sugar, garlic, salt, and pepper to create the sauce.

In a separate small bowl, mix cornflour with water (or pineapple juice) to form a slurry for thickening.
