Instructions

    In a large bowl, whisk eggs briefly, then add milk, cream, melted butter, sugar, cinnamon, and vanilla extract. Whisk until combined.

    Add bread cubes and sultanas. Mix briefly, then allow to soak for 3 minutes.

    Pour mixture into a 10-cup (2.5 litre) baking dish. Push sultanas slightly below the surface if there are many on top.

    Drizzle 2 tbsp melted butter over the top.

    Bake for 25–30 minutes until golden on top and set inside but still slightly wobbly.

    Optionally brush with remaining 1 1/2 tbsp melted butter and dust with icing sugar.
